1 onion, halved and sliced
2 tbsp sunflower oil
2 sachets Moroccan style seasoning mix
1 small butternut squash, peeled and cubed
50g dried apricots, halved
1 red pepper, deseeded and sliced
2 courgettes, thickly sliced
200g frozen broad beans
Chopped coriander, to serve
Rice, to serve
- Cook the onion in the oil in a large saucepan until soft. Stir in the Moroccan Reason to Season. Add the butternut squash and 400ml water. Cover and simmer for 10 minutes.
- Add the apricots, cover and simmer for another 5 minutes. Add the red pepper, courgettes and broad beans, bring back to the boil and simmer for 5 minutes more.
- Sprinkle with coriander and serve with rice.
